Event Description

Traditional methods of preserving the harvest are low energy techniques which have been honed over millennia. They are part of the authentic tastes of our cultures. Learn about dehydrating, lacto-fermentation (think sauerkraut, pickles, kim chi), and preserving with oil, vinegar, salt, alcohol, sugar and smoking. We will also learn steam canning, a widely used (but not USDA approved) modern preservation method which complements traditional methods. Take home recipes and inspiration. Homegrown snacks and tea provided.

Register through Whatcom Folk School. $15 registration plus $20 class fee.
