Traditional food preservation methods create the defining flavors of local cooking. Italian sundried tomatoes and herbs, European sauerkraut and pickles, Korean pickled ginger and kimche, all are food traditions that rely on low-energy preservation methods. This class will teach you how to put up our local bounty using drying, cellaring, salting, oil, vinegar, alcohol, sugar and a little smoking. Presented by gardener and cook Celt Schira.
